Ingredients

  • 3 large red bell peppers
  • 3 medium tomatoes
  • 1 large white onion
  • 1 cup white vinegar
  • 0.75 cup granulated sugar
  • 1 tablespoon salt
  • 1 teaspoon mustard seeds
  • 1 teaspoon celery seeds
  • 0.5 teaspoon ground allspice
  • 0.25 teaspoon ground cloves
  • 1 tablespoon cornstarch
  • 2 tablespoons water

Directions

Step 1

Wash and core the red bell peppers and tomatoes. Finely dice the peppers, tomatoes, and onion, or use a food processor for a finer consistency, but avoid over-processing.

Step 2

In a large, non-reactive pot, combine the diced peppers, tomatoes, and onion. Add the white vinegar, granulated sugar, salt, mustard seeds, and celery seeds. Stir well to combine.

Step 3

Place the pot over medium heat and bring the mixture to a boil. Once boiling, reduce the heat to low and simmer for 30 minutes, stirring occasionally to prevent sticking.

Step 4

After 30 minutes, add the ground allspice and ground cloves to the pot. Stir thoroughly and let it cook for an additional 5 minutes.

Step 5

In a small bowl, whisk together the cornstarch and water until smooth. Slowly add this mixture to the pot while stirring constantly. This will help thicken the relish.

Step 6

Continue cooking the relish for another 5 minutes, or until it reaches your desired consistency.

Step 7

Remove the pot from heat and let the relish cool slightly. Transfer it to sterilized jars or an airtight container if you plan on refrigerating it.

Step 8

For the best flavor, refrigerate the relish for at least 24 hours before serving to allow the flavors to meld together. It can be stored in the refrigerator for up to 3 weeks.
