Ingredients

  • 1.5 cups long-grain white rice
  • 3 cups water
  • 2 tablespoons extra virgin olive oil
  • 1 medium yellow onion, finely chopped
  • 3 garlic cloves, minced
  • 1 teaspoon lemon zest
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup feta cheese, crumbled (optional)
  • 2 tablespoons pine nuts, toasted (optional)

Directions

Step 1

Rinse the rice under cold water until the water runs clear. Set aside to drain.

Step 2

In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes or until soft and translucent.

Add the minced garlic and cook for another 1 minute, stirring frequently to prevent burning.

Stir in the rinsed and drained rice. Cook for 2 minutes, stirring constantly, to lightly toast the rice.

Add the water, lemon zest, lemon juice, dried oregano, salt, and black pepper to the pan. Stir well to combine.
