Ingredients

  • 30 grams unsweetened cocoa powder
  • 400 grams sweetened condensed milk
  • 50 grams unsalted butter
  • 150 grams digestive biscuits or graham crackers (crushed)
  • 50 grams desiccated coconut
  • 50 grams chopped nuts (optional, e.g., almonds or hazelnuts)
  • 100 grams chocolate sprinkles

Directions

Step 1

In a medium saucepan, combine the unsweetened cocoa powder, sweetened condensed milk, and unsalted butter.

Step 2

Place the saucepan over low heat and stir continuously until the mixture is thick and glossy, about 8–10 minutes. The consistency should resemble a thick fudge. Remove from heat and let the mixture cool for 10 minutes.

Step 3

While the chocolate mixture cools, prepare the crushed digestive biscuits or graham crackers by placing them in a sealed bag and rolling over them with a rolling pin or using a food processor. Mix the crushed biscuits with the desiccated coconut and chopped nuts (if using) in a medium bowl.

Step 4

Once the chocolate mixture is cool enough to handle, fold in the biscuit mixture until well combined.

Step 5

Using clean hands, scoop out small amounts of the mixture (about a tablespoon) and roll them into balls.

Step 6

Roll each ball in chocolate sprinkles until fully coated, pressing gently to ensure the sprinkles stick.

Step 7

Place the finished balls on a tray lined with parchment paper. Once all the Hedgehogs are formed, refrigerate them for at least 1 hour to set completely.

Step 8

Serve chilled or at room temperature. Store any leftovers in an airtight container in the fridge for up to 1 week.
