Ingredients

  • 1 medium Onion, diced
  • 3 Garlic cloves, minced
  • 3 medium Carrots, diced
  • 3 Celery stalks, diced
  • 1 medium Zucchini, diced
  • 2 cups Cabbage, shredded
  • 1 cup Green beans, trimmed and chopped
  • 1 15-ounce can Canned diced tomatoes (no added salt)
  • 6 cups Vegetable broth (low-sodium)
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 1 teaspoon Dried thyme
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 cups Fresh spinach, chopped
  • 2 tablespoons Fresh parsley, chopped
  • 1 tablespoon Lemon juice

Directions

Step 1

Lightly coat the bottom of a large soup pot with olive oil spray and heat over medium heat.

Step 2

Add the diced onion and minced garlic to the pot, and sauté for 2-3 minutes until fragrant and the onion is translucent.

Stir in the diced carrots, celery, zucchini, and green beans. Cook for 5 minutes, stirring occasionally.

Add the shredded cabbage and canned diced tomatoes (with their liquid) to the pot.

Step 5

Pour in the vegetable broth and stir in the dried oregano, basil, thyme, salt, and black pepper.
