  • 0.25 teaspoons black pepper
  • 1 teaspoon (optional, for garnish) fresh thyme leaves

Directions

Step 1

Peel the sweet potatoes and russet potato, then chop them into 1-inch cubes. Set aside.

In a large pot, melt the butter over medium heat. Add the diced onion and sauté for 4-5 minutes until softened and translucent.
