Ingredients

  • 1 lb Chicken breast
  • 2 tbsp Creole seasoning
  • 2 tbsp Olive oil
  • 1 Yellow onion, diced
  • 1 Green bell pepper, diced
  • 2 Celery stalk, diced
  • 3 Garlic cloves, minced
  • 1 15-oz can Canned diced tomatoes
  • 3 cups Chicken broth
  • 1 cup Heavy cream
  • 12 oz Penne pasta, uncooked
  • 1 cup Parmesan cheese, grated
  • 2 Green onions, sliced
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 1 tsp Paprika

Directions

Step 1

Cut the chicken breast into bite-sized pieces and season with 1 tablespoon of Creole seasoning.

Step 2

Heat a Dutch oven over medium-high heat. Add 1 tablespoon of olive oil and cook the chicken until browned on all sides, about 5-7 minutes. Remove the chicken and set aside.

Step 3

Lower the heat to medium and add the remaining 1 tablespoon of olive oil. Saute the diced onion, green bell pepper, and celery for 5 minutes until softened.

Step 4

Stir in the minced garlic, remaining Creole seasoning, salt, black pepper, and paprika. Cook for an additional 1-2 minutes until fragrant.
