Ingredients

  • 2 lbs beef stew meat
  • 4 medium potatoes (russet or Yukon Gold)
  • 4 medium carrots
  • 2 medium parsnips
  • 3 celery stalks
  • 1 large yellow onion
  • 3 garlic cloves
  • 2 tbsp tomato paste
  • 4 cups beef broth
  • 1 15 oz can diced tomatoes (canned)
  • 2 tbsp Worcestershire sauce
  • 1 tbsp soy sauce
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 2 bay leaves
  • 2 tbsp olive oil
  • 0.25 cup flour
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 cup frozen peas
  • 2 tbsp fresh parsley (optional, for garnish)

Directions

Step 1

Prepare the vegetables: Peel the potatoes, carrots, and parsnips, and chop them into bite-sized chunks. Slice the celery and dice the onion. Mince the garlic cloves.

Step 2

Heat a large skillet over medium-high heat and add the olive oil.

Step 3

Season the beef stew meat with salt and pepper, then lightly coat the pieces in flour.

Step 4

In batches, sear the beef in the hot skillet until browned on all sides (about 2-3 minutes per side). Transfer the browned meat to the crock pot.

Step 5

In the same skillet, add the onions and garlic. Sauté for 2-3 minutes until fragrant, then stir in the tomato paste and cook for another minute.

Step 6

Deglaze the skillet by adding 1/2 cup of beef broth, scraping up any browned bits from the bottom of the pan. Pour the mixture into the crock pot.

Step 7

Add the chopped potatoes, carrots, parsnips, celery, diced tomatoes, Worcestershire sauce, soy sauce, thyme, rosemary, and bay leaves to the crock pot.

Step 8

Pour in the remaining beef broth and give everything a good stir to combine.

Step 9

Set the crock pot to low and cook for 8 hours, or until the beef is tender and the vegetables are cooked through.

Step 10

In the last 30 minutes of cooking, stir in the frozen peas and adjust the seasoning with additional salt and pepper, if needed.

Step 11

Remove the bay leaves before serving. Garnish with chopped fresh parsley, if desired.

Step 12

Serve hot with crusty bread or over mashed potatoes for a hearty winter meal.
