  • 1 cup green beans, trimmed and cut into 1-inch pieces
  • 2 tablespoons tomato paste
  • 6 cups beef broth
  • 14 ounces diced tomatoes, canned
  • 1 leaf bay leaf
  • 1 teaspoon dried thyme
  • 1 cup frozen peas
  • 2 tablespoons parsley, finely chopped

Directions

Step 1

Heat the olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat.

Season the beef stew meat with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper. Add the beef to the pot in batches, searing for 3-4 minutes per side until browned. Remove the beef and set aside.
