  • 2 medium celery stalks, sliced
  • 3 garlic cloves, minced
  • 2 medium potatoes, peeled and diced
  • 6 cups beef broth
  • 14.5 ounces canned diced tomatoes
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 1 cup green beans, cut into 1-inch pieces
  • 1 cup frozen peas
  • 2 tablespoons chopped fresh parsley

Directions

Step 1

Heat the olive oil in a large soup pot over medium-high heat.

Step 2

Season the beef cubes with salt and pepper. Add them to the pot and sear until browned on all sides, about 5 minutes. Remove the beef and set aside.

In the same pot, add the chopped onion, sliced carrots, and sliced celery. Cook until the onions are translucent, about 5 minutes.
