  • 2 pounds beef chuck or stew meat

  • 4 large, sliced carrots
  • 3 sliced celery stalks
  • 3 medium, diced potatoes
  • 4 cups beef broth
  • 1 bay leaf
  • 4 sprigs fresh thyme
  • 2 tablespoons tomato paste
  • 1 cup red wine (optional)
  • 1 cup frozen peas

Directions

Step 1

In a large bowl, season the beef with salt and pepper, then dust with the flour to lightly coat.

Step 2

Heat 2 tablespoons of oil in a large pot or Dutch oven over medium-high heat. In batches, brown the beef on all sides. Remove the beef and set aside.
