  • 1 bay leaf
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Heat the olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat.

Season the moose meat with salt and black pepper, then brown it in batches, making sure not to overcrowd the pot. Remove the browned meat and set aside.

In the same pot, add the diced onion, carrots, and celery. Cook for 5-7 minutes until softened and translucent.
