Ingredients

  • 1 tablespoon butter
  • 1 large onion
  • 3 cloves garlic
  • 2 medium carrots
  • 2 celery stalks
  • 1 pound mushrooms
  • 1 cup red wine
  • 4 cups vegetable broth
  • 2 tablespoons tomato paste
  • 1 teaspoon thyme
  • 1 bay leaf
  • 2 tablespoons fresh parsley
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons flour
  • 2 tablespoons water

Directions

Step 1

Dice the onion, mince the garlic, slice the carrots, chop the celery, and coarsely chop the mushrooms.

Step 2

Heat the olive oil and butter in a large pot over medium heat.

Step 3

Add the diced onion to the pot and sauté until translucent, about 5 minutes.

Step 4

Stir in the minced garlic, sliced carrots, and chopped celery. Cook for another 5 minutes, stirring occasionally.

Add the chopped mushrooms to the pot and sauté until they release their moisture and begin to brown, about 8 minutes.
