  • 4 cups beef broth
  • 2 large Russet potatoes, diced into 1-inch cubes
  • 3 medium carrots, peeled and sliced
  • 1 cup frozen corn kernels
  • 15 ounces black beans (canned), drained and rinsed
  • 2 teaspoons ground cumin
  • 1.5 teaspoons chili powder
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 1.5 teaspoons salt
  • 0.5 teaspoons black pepper
  • 0.25 cup fresh cilantro, chopped (optional, for garnish)
  • 4 pieces lime wedges (optional, for serving)

Directions

Step 1

Heat the olive oil in a large Dutch oven or heavy pot over medium-high heat.

Season the beef stew meat with salt and black pepper. Add the meat to the pot in batches, searing until browned on all sides. Remove the meat and set aside.
