  • 2 medium, peeled and diced russet potatoes
  • 1 bay leaf
  • 1 teaspoon, dried thyme
  • 1 teaspoon smoked paprika
  • 0.25 teaspoon cayenne pepper
  • 1 teaspoon, or to taste salt
  • 0.5 teaspoon black pepper
  • 600 grams, such as cod or haddock, cut into chunks firm white fish fillets
  • 0.5 juiced lemon
  • 3 tablespoons, chopped fresh parsley

Directions

Step 1

Heat olive oil in a large pot over medium heat.

Step 2

Add diced onion and sauté until translucent, about 5 minutes.

Step 3

Stir in minced garlic, diced red bell pepper, chopped celery, and diced carrot. Cook for another 5 minutes, stirring occasionally, until vegetables start to soften.
