  • 3 medium celery stalks, sliced
  • 1 medium red bell pepper, diced
  • 1.5 cups dried green or brown lentils, rinsed
  • 6 cups vegetable broth
  • 1 15-ounce can diced tomatoes, with juice
  • 1 teaspoon ground cumin
  • 1 teaspoon dried thyme
  • 1 whole bay leaf
  • 4 cups baby spinach
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper, freshly ground
  • 1 tablespoon lemon juice

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the diced onion and sauté for about 5 minutes until transparent.

Add the minced garlic, sliced carrots, celery, and diced red bell pepper. Cook for another 5 minutes until the vegetables begin to soften.

Stir in the rinsed lentils, followed by the vegetable broth and diced tomatoes with their juice.
