Ingredients

  • 1 lb Ground beef
  • 2 tbsp Olive oil
  • 1 medium Yellow onion, finely chopped
  • 3 cloves Garlic cloves, minced
  • 15 oz Crushed tomatoes
  • 2 tbsp Tomato paste
  • 1 tsp Dried basil
  • 1 tsp Dried oregano
  • 0.5 tsp Red pepper flakes
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 1 medium Zucchini, diced
  • 3 cups Cooked pasta (penne or fusilli recommended)
  • 0.25 cup Grated Parmesan cheese
  • 2 tbsp Fresh parsley, chopped

Directions

Step 1

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.

Step 2

Add the ground beef and cook, breaking it apart with a wooden spoon, until browned, about 5-7 minutes. Remove the beef from the skillet and set aside.

Step 3

In the same skillet, add the remaining 1 tablespoon of olive oil. Add the chopped onion and cook until softened, about 3-4 minutes.

Stir in the minced garlic and cook for an additional 1 minute, until fragrant.

Add the crushed tomatoes, tomato paste, dried basil, dried oregano, red pepper flakes, salt, and black pepper to the skillet. Stir to combine.
