Ingredients

  • 4 pieces chicken thighs (bone-in, skinless)
  • 1 tablespoon olive oil
  • 1 large yellow onion, diced
  • 3 medium carrots, peeled and sliced
  • 3 medium celery stalks, sliced
  • 3 cloves garlic cloves, minced
  • 8 cups chicken broth
  • 2 cups water
  • 1 teaspoon dried thyme
  • 2 leaves bay leaves
  • 2 cups egg noodles
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper, ground

Directions

Step 1

Heat the olive oil in a large stockpot or Dutch oven over medium heat.

Step 2

Add the chicken thighs and sear on both sides until lightly golden, about 2-3 minutes per side. Remove the chicken and set aside.

Step 3

In the same pot, add the diced onion, sliced carrots, and sliced celery. Sauté for 5-7 minutes until the vegetables are softened.

Add the minced garlic and cook for another 1 minute until fragrant.

Pour in the chicken broth and water, then stir in the dried thyme, bay leaves, salt, and pepper.
