  • 1 pound Beef stew meat (cubed)

  • 1 medium Yellow onion (diced)
  • 2 medium Carrots (peeled and sliced)
  • 2 medium Celery stalks (sliced)
  • 3 cloves Garlic (minced)
  • 8 cups Beef broth
  • 15 ounces Diced tomatoes (canned, with juice)
  • 2 tablespoons Tomato paste
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried oregano
  • 2 medium Potatoes (peeled and diced)
  • 1 cup Green beans (trimmed and cut into 1-inch pieces)
  • 2 cups Egg noodles
  • 2 tablespoons Fresh parsley (chopped, for garnish)

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium-high heat.

Step 2

Season the beef stew meat with salt and black pepper. Add the beef to the pot and sear on all sides until browned. Remove the beef from the pot and set aside.

In the same pot, add the diced onion, sliced carrots, and celery. Sauté for 5-7 minutes until softened.

Add the minced garlic and cook for an additional 1 minute until fragrant.

Return the beef to the pot, then pour in the beef broth, diced tomatoes (with their juice), and tomato paste. Stir to combine.
