  • 4 cups beef broth
  • 2 bay leaves
  • 3 fresh thyme sprigs
  • 1 cup frozen peas
  • 2 tablespoons chopped fresh parsley (optional, for garnish)

Directions

Step 1

Season the beef cubes with salt and black pepper. Dredge the seasoned beef in flour, shaking off any excess.

In a large pot or Dutch oven, heat olive oil over medium-high heat. Add the beef in batches, ensuring not to overcrowd the pan. Brown all sides of the beef cubes, then remove from the pot and set aside.
