  • 2 pounds beef chuck roast
  • 1 teaspoon salt

  • 3 cloves garlic, minced
  • 4 medium carrots, peeled and chopped
  • 3 medium celery stalks, chopped
  • 4 medium potatoes, peeled and cubed
  • 4 cups beef broth
  • 3 tablespoons tomato paste
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • 1 cup frozen peas
  • 2 tablespoons all-purpose flour
  • 2 tablespoons olive oil

Directions

Step 1

Season the beef chuck roast with 1 teaspoon of salt and 1 teaspoon of black pepper.

Step 2

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Sear the beef on all sides until well-browned, about 4-5 minutes per side. Remove from heat and set aside.

Step 3

In the same skillet, add the diced onion and minced garlic. Sauté for 2-3 minutes, until softened and fragrant. Transfer to the Crock Pot.
