Ingredients

  • 2 tablespoons olive oil
  • 1.5 pounds stew beef, cut into 1-inch cubes
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 large onion, chopped
  • 2 medium carrots, diced
  • 2 stalks celery stalks, diced
  • 3 cloves garlic cloves, minced
  • 8 cups beef broth
  • 1 can (14.5 ounces) diced tomatoes, with juice
  • 1 cup pearl barley
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 0.25 cup parsley, chopped

Directions

Step 1

Heat the olive oil in a large pot over medium-high heat.

Step 2

Season the beef cubes with salt and pepper.

Step 3

Add the beef to the pot in batches, searing until browned on all sides; this should take about 5-7 minutes per batch. Remove the beef and set aside.

Step 4

In the same pot, add the chopped onion, carrots, and celery. Cook until the onions are translucent, about 5 minutes.

Step 5

Add the minced garlic and cook for an additional 1 minute until fragrant.

Step 6

Return the browned beef to the pot.

Step 7

Pour in the beef broth and add the can of diced tomatoes with juice.

Step 8

Stir in the barley, thyme, and bay leaf.

Step 9

Bring the mixture to a boil, then reduce the heat to low and cover. Simmer for about 60-70 minutes, or until the beef and barley are tender.

Step 10

Taste and adjust the seasoning with more salt and pepper if needed.

Step 11

Discard the bay leaf, then stir in the chopped parsley just before serving.

Step 12

Serve hot and enjoy your hearty beef barley soup.
