  • 14 ounces Canned diced tomatoes
  • 2 tablespoons Tomato paste
  • 6 cups Beef broth
  • 15 ounces Canned kidney beans, drained and rinsed
  • 15 ounces Canned white beans, drained and rinsed
  • 1 medium Zucchini, diced
  • 1 cup Cooked rice (white or brown)
  • 1 leaf Bay leaf
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley, chopped (optional for garnish)

Directions

Step 1

Heat olive oil in a large pot or Dutch oven over medium heat.

Step 2

Add ground beef and cook until browned, breaking it into small pieces with a spoon. Drain excess fat if necessary.

Add diced onion, carrots, and celery to the pot. Cook for 5-7 minutes, stirring occasionally, until vegetables soften.
