Ingredients

  • 1 pound Ground beef
  • 1 medium Yellow onion, diced
  • 2 cloves Garlic cloves, minced
  • 4 medium Russet potatoes, thinly sliced
  • 2 cups Cheddar cheese, shredded
  • 1 cup Beef broth
  • 0.5 cup Heavy cream
  • 2 tablespoons All-purpose flour
  • 2 tablespoons Unsalted butter
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Paprika
  • 0.5 teaspoon Dried thyme
  • 1 tablespoon Olive oil
  • 2 tablespoons Parsley, chopped (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C) and grease a 9x13-inch casserole dish with cooking spray or a thin layer of butter.

Step 2

In a large skillet, heat olive oil over medium heat. Add the diced onion and cook until softened, about 3-4 minutes.

Step 3

Add the ground beef to the skillet and cook until browned, breaking it up with a wooden spoon. Stir in the minced garlic, salt, black pepper, paprika, and thyme. Cook for an additional 2 minutes. Remove from heat and set aside.

Step 4

In a medium saucepan, melt the butter over medium heat. Stir in the flour and cook for 1 minute, stirring constantly to form a roux.

Step 5

Slowly whisk in the beef broth and heavy cream, ensuring no lumps form. Cook until the mixture thickens, about 3-4 minutes. Remove from heat and set the sauce aside.

Step 6

Layer half of the thinly sliced potatoes at the bottom of the prepared casserole dish. Spread half of the cooked beef mixture on top. Pour half of the sauce evenly over the layer.

Step 7

Repeat the layers with the remaining potatoes, beef mixture, and sauce. Top the casserole with the shredded cheddar cheese.

Step 8

Cover the dish tightly with aluminum foil and bake in the preheated oven for 40 minutes.

Step 9

Remove the foil and bake for an additional 15-20 minutes, or until the potatoes are tender and the cheese is bubbly and golden brown.

Step 10

Let the casserole cool for 5-10 minutes before serving. Garnish with chopped parsley for a pop of color, if desired.
