Ingredients

  • 3 heads Hearts of romaine lettuce
  • 1 large Apple (Granny Smith or Honeycrisp, thinly sliced)
  • 0.5 medium Red onion (thinly sliced)
  • 0.5 cup Crumbled goat cheese (optional)
  • 0.5 cup Chopped walnuts or pecans (toasted)
  • 3 tablespoons Apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1.5 teaspoons Honey
  • 0.25 cup Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper (freshly ground)

Directions

Step 1

Wash the hearts of romaine thoroughly and pat them dry with a kitchen towel. Slice each head lengthwise into halves or quarters, depending on preference, and arrange them on a large serving platter or in individual bowls.

Step 2

Slice the apple into thin wedges, keeping the slices uniform for even texture. Thinly slice the red onion. Scatter both the apple slices and onion over the romaine hearts.

Step 3

If using goat cheese, sprinkle it evenly over the salad, followed by the toasted nuts for added crunch.

Step 4

Prepare the cider vinaigrette: In a small bowl, whisk together the apple cider vinegar, Dijon mustard, honey, salt, and pepper until well combined. While whisking, slowly drizzle in the olive oil to create a smooth and emulsified dressing.

Step 5

Taste the vinaigrette and adjust seasoning if needed. Drizzle the dressing evenly over the salad just before serving.

Step 6

Serve immediately and enjoy this crisp, flavorful salad!
