Ingredients

  • 14 oz (1 can or jar) Hearts of palm
  • 1 cup Cherry tomatoes
  • 1 small Red onion
  • 2 tbsp (chopped) Fresh parsley
  • 3 tbsp Olive oil
  • 2 tbsp Lemon juice
  • 1 tsp Honey
  • 1 tsp Dijon mustard
  • 0.25 tsp Salt
  • 0.25 tsp Black pepper

Directions

Step 1

Drain and rinse the hearts of palm, then slice them into 1/4-inch thick rounds. Place them in a mixing bowl.

Step 2

Wash and halve the cherry tomatoes. Add them to the bowl with the hearts of palm.

Step 3

Peel and thinly slice the red onion. Add the slices to the bowl.

Step 4

Sprinkle the chopped parsley over the vegetables in the bowl.

Step 5

In a small mixing bowl, combine the olive oil, lemon juice, honey, Dijon mustard, salt, and black pepper. Whisk until the dressing is fully emulsified.
