Ingredients

  • 400 grams Large prawns, peeled and deveined

  • 150 grams Mixed salad greens (spinach, arugula, kale)
  • 1 large Avocado, diced
  • 200 grams Cherry tomatoes, halved
  • 1 medium Cucumber, thinly sliced
  • 1 small Red onion, thinly sliced
  • 2 tablespoons Fresh cilantro, chopped
  • 2 tablespoons Fresh parsley, chopped
  • 3 tablespoons Lemon juice
  • 2 tablespoons Orange juice, freshly squeezed
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Honey
  • 0 Salt, to taste (optional)
  • 0 Freshly ground black pepper, to taste

Directions

Step 1

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 30 seconds until fragrant.

Step 2

Add the prawns to the skillet. Cook for 2-3 minutes on each side, or until they turn pink and are cooked through. Remove from heat and set aside to cool slightly.
