Ingredients

  • 2 cups Whole wheat flour
  • 1 cup All-purpose flour
  • 2.25 teaspoons Instant yeast
  • 1 cup Warm water (around 110°F)
  • 2 tablespoons Olive oil
  • 1 tablespoon Honey
  • 0.5 teaspoon Salt
  • 2 tablespoons Za'atar seasoning
  • 1 tablespoon Extra olive oil (for brushing)
  • 1 tablespoon Sesame seeds (optional, for topping)

Directions

Step 1

In a large mixing bowl, combine the whole wheat flour, all-purpose flour, instant yeast, and salt. Stir to combine.

Step 2

In a separate bowl, mix the warm water, olive oil, and honey until the honey is dissolved.

Step 3

Pour the wet ingredients into the dry ingredients and mix until a sticky dough forms.

Step 4

Transfer the dough to a lightly floured surface and knead for 8-10 minutes until smooth and elastic. Add a small amount of flour if the dough is too sticky, but avoid adding too much to keep the bread tender.

Step 5

Place the dough in a lightly oiled bowl, cover with a clean kitchen towel or plastic wrap, and let it rise in a warm place for about 1 hour, or until it doubles in size.

Step 6

Preheat your oven to 450°F (232°C) and place a baking sheet or pizza stone inside to heat.

Step 7

Divide the dough into 4 equal portions and roll each portion into a flat circle about 1/4 inch thick.

Step 8

Brush the surface of each flatbread with olive oil and sprinkle evenly with za'atar seasoning. Optionally, sprinkle sesame seeds on top for added flavor and texture.

Step 9

Carefully place the flatbreads onto the preheated baking sheet or pizza stone. Bake for 10-12 minutes, or until the edges are golden brown and the bread is cooked through.

Step 10

Remove from the oven and allow to cool slightly before serving. Enjoy warm or at room temperature with hummus, yogurt dips, or as an accompaniment to your favorite dishes.
