Ingredients

  • 4 medium Russet potatoes
  • 4 cups Fresh spinach
  • 3 cloves Garlic cloves
  • 3 tablespoons Nutritional yeast
  • 1 cup Oat flour
  • 2 tablespoons Ground flaxseed
  • 6 tablespoons Water
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0 as needed Olive oil spray

Directions

Step 1

Peel and chop the russet potatoes into chunks. Boil them in a large pot of water for 15-20 minutes or until fork-tender.

Step 2

While the potatoes cook, prepare the flax egg by combining the ground flaxseed with water in a small bowl. Let it sit for 5 minutes to thicken.

Step 3

In a large pan, sauté the fresh spinach with 1 minced garlic clove over medium heat until wilted. Remove from heat and set aside.

Once the potatoes are cooked, drain them and mash them in a large mixing bowl until smooth.
