Ingredients

  • 4 pieces Turkey breast cutlets
  • 1 cup Whole-wheat breadcrumbs
  • 0.5 cup Rolled oats (blended into a fine flour)
  • 2 large Egg whites
  • 2 tablespoons Unsweetened almond milk
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika
  • 1 teaspoon Dried parsley
  • 0 as needed Olive oil spray
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 4 pieces Lemon wedges (for serving)

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat and lightly coat it with olive oil spray.

Step 2

Place each turkey breast cutlet between two sheets of plastic wrap or parchment paper. Using a meat mallet or rolling pin, gently pound the cutlets to an even thickness of about 1/4 inch.

Step 3

In a shallow dish, combine the whole-wheat breadcrumbs, blended oat flour, garlic powder, paprika, dried parsley, salt, and black pepper. Mix well to evenly distribute the seasonings.

Step 4

In another shallow dish, whisk together the egg whites and almond milk until smooth.

Step 5

Working one at a time, dip each turkey cutlet into the egg white mixture, allowing any excess to drip off. Then coat both sides in the breadcrumb mixture, pressing gently to adhere.

Step 6

Place the coated cutlets on the prepared baking sheet in a single layer. Lightly spray the tops with olive oil spray to promote browning.

Step 7

Bake in the preheated oven for 10 minutes. Flip each cutlet and lightly spray the other side with olive oil spray. Continue baking for another 10 minutes, or until the schnitzels are golden brown and the turkey is cooked through (internal temperature should reach 165°F or 74°C).

Step 8

Remove from the oven and let rest for 2 minutes. Serve immediately with fresh lemon wedges for squeezing over the top.
