  • 3 large russet potatoes, peeled and cubed
  • 0.5 cup unsweetened almond milk
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon salt
  • 2 tablespoons fresh parsley, chopped (optional garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Place the peeled and cubed potatoes in a large pot. Cover them with water, add a pinch of salt, and bring to a boil. Cook the potatoes for 15-20 minutes or until they are fork-tender.
