  • 1 teaspoon ground cumin
  • 1 bay leaf
  • 4 cups low-sodium vegetable broth
  • 2 cups spinach leaves, roughly chopped
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Rinse the lentils thoroughly under cold water and check for any small stones or debris. Set aside.
