Ingredients

  • 1 tablespoon Olive oil
  • 1 pound Lean ground turkey (93% lean or higher)
  • 3 cloves Garlic, minced
  • 1 medium Yellow onion, diced
  • 2 medium Carrots, diced
  • 2 Celery stalks, diced
  • 1 large Russet potato, diced
  • 6 cups Low-sodium chicken or vegetable broth
  • 4 cups Kale, stems removed and leaves chopped
  • 1 cup Unsweetened almond milk
  • 0.5 teaspoon Crushed red pepper flakes
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper, freshly ground

Directions

Step 1

Heat olive oil over medium heat in a large pot or Dutch oven.

Step 2

Add the ground turkey, breaking it up into small pieces. Cook for 5–7 minutes, or until no longer pink. Remove the cooked turkey from the pot and set aside.

Step 3

To the same pot, add minced garlic, diced onion, carrots, and celery. Sauté for 5–6 minutes, or until vegetables are softened.
