Ingredients

  • 500 grams Lean ground turkey (93% lean or higher)
  • 60 grams Rolled oats
  • 2 large Egg whites
  • 15 grams Fresh parsley, chopped
  • 3 cloves Garlic, minced
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Ground cumin
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 10 milliliters Extra-virgin olive oil
  • 240 milliliters Low-sodium tomato sauce

Directions

Step 1

In a large mixing bowl, combine the lean ground turkey, rolled oats, egg whites, chopped parsley, minced garlic, smoked paprika, ground cumin, salt, and black pepper. Mix well until all ingredients are evenly distributed.

Step 2

Form the mixture into small, flat patties, approximately 6 cm in diameter and 1.5 cm thick. You should have about 8-10 patties in total.

Step 3

Heat 5 milliliters of extra-virgin olive oil in a large nonstick skillet over medium heat.

Step 4

Cook the patties in batches for 2-3 minutes on each side until golden brown. Remove from the skillet and set aside.

Step 5

Add the remaining 5 milliliters of extra-virgin olive oil to the skillet and pour in the low-sodium tomato sauce. Let the sauce simmer for 3-4 minutes, stirring occasionally.

Step 6

Return the patties to the skillet, spooning some of the tomato sauce over them. Cover and simmer for 10 minutes on low heat to allow the flavors to meld and the patties to cook through completely.

Step 7

Serve warm, garnished with additional chopped parsley if desired. These Tortitas de Carne Toledo pair wonderfully with a side of steamed vegetables or a green salad for a well-rounded meal.
