Ingredients

  • 12 oz Whole grain tortellini
  • 1.5 cups Cherry tomatoes
  • 1 Cucumber (diced)
  • 1 Red bell pepper (diced)
  • 2 cups Baby spinach (chopped)
  • 0.25 Red onion (thinly sliced)
  • 3 tbsp Olive oil
  • 2 tbsp Balsamic vinegar
  • 1 tbsp Fresh lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp Honey (optional for sweetness)
  • 1 clove Garlic (minced)
  • 2 tbsp Fresh parsley (chopped)
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper

Directions

Step 1

Cook the whole grain tortellini according to the package instructions. Once cooked, drain and rinse under cool water to stop the cooking process. Set aside to cool completely.

Step 2

In a large mixing bowl, combine the cherry tomatoes, diced cucumber, red bell pepper, chopped spinach, and sliced red onion.
