  • 2 medium Carrots, grated
  • 1 cup Red lentils, rinsed and drained
  • 2.5 cups Low-sodium vegetable broth
  • 2 tablespoons Tomato paste
  • 1 teaspoon Cumin powder
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Chili powder
  • 0.5 teaspoon Ground coriander
  • 0.25 teaspoon Ground black pepper
  • 0.25 teaspoon Salt (optional, or to taste)
  • 1 cup Cooked black beans
  • 2 tablespoons Fresh cilantro, chopped
  • 1 tablespoon Lime juice

Directions

Step 1

Heat the olive oil in a large skillet or sauté pan over medium heat.

Step 2

Add the diced onion and cook for 3-4 minutes until translucent.

Stir in the minced garlic and cook for another 1 minute until fragrant.

Add the diced red bell pepper and grated carrots, and cook for 4-5 minutes until softened.
