Ingredients

  • 500 grams Skinless, boneless chicken breasts
  • 2 teaspoons Olive oil
  • 2 tablespoons Low-sodium soy sauce
  • 2 tablespoons Honey
  • 1 tablespoon Apple cider vinegar
  • 2 cloves Garlic, minced
  • 1 teaspoon Fresh ginger, grated
  • 0.5 teaspoon Red chili flakes
  • 1 teaspoon Cornstarch
  • 2 tablespoons Water
  • 1 medium Red bell pepper, thinly sliced
  • 1 medium Green bell pepper, thinly sliced
  • 1 medium Carrot, julienned
  • 200 grams Broccoli florets
  • 2 stalks Scallions, chopped
  • 4 cups Cooked brown rice

Directions

Step 1

1. Prepare the sweet chili sauce: In a small bowl, whisk together low-sodium soy sauce, honey, apple cider vinegar, minced garlic, grated ginger, and red chili flakes. Dissolve the cornstarch in 2 tablespoons of water and add it to the mixture to thicken the sauce when cooked.
