Ingredients

  • 450 grams Ground turkey (lean, 93% or higher)
  • 60 grams Rolled oats (blended into a fine flour)
  • 2 large Egg whites
  • 15 grams Fresh parsley (finely chopped)
  • 2 cloves Garlic (minced)
  • 50 grams Onion (grated)
  • 5 grams Dijon mustard
  • 2 grams Salt
  • 1 gram Black pepper
  • 15 milliliters Olive oil (for cooking)
  • 2 grams Lemon zest
  • 100 grams Baby spinach (for serving, optional)

Directions

Step 1

In a large mixing bowl, combine the ground turkey, oat flour, egg whites, parsley, grated onion, minced garlic, Dijon mustard, salt, black pepper, and lemon zest. Use clean hands or a wooden spoon to mix thoroughly until all ingredients are evenly incorporated.

Step 2

Divide the mixture into 4 equal portions and shape each into a patty approximately 2 cm thick. Flatten slightly to ensure even cooking.

Step 3

Heat a large non-stick skillet over medium heat and add the olive oil.

Step 4

Once the oil is hot, place the patties into the skillet. Be careful not to overcrowd; cook in batches if necessary.

Step 5

Cook the patties for 5-6 minutes on one side, then flip and cook for another 5-6 minutes until fully cooked through and the internal temperature reads 74°C (165°F).

Step 6

Remove the patties from the skillet and let them rest on a plate for 2-3 minutes.

Step 7

Serve warm over a bed of baby spinach or alongside your favorite heart-healthy side dishes.
