  • 1 cup Low-sodium vegetable broth
  • 3 medium Carrots (cut into chunks)
  • 2 medium Parsnips (cut into chunks)
  • 1 large Red onion (cut into thick wedges)
  • 1 pound Baby potatoes (halved)

Directions

Step 1

Preheat your oven to 375°F (190°C).
