  • 1 tablespoon Lemon juice (freshly squeezed)
  • 2 tablespoons Water
  • 0.25 teaspoon Black pepper
  • 0.25 teaspoon Salt (optional, to taste)

Directions

Step 1

Place the sun-dried tomatoes in a bowl and cover with 1 cup of boiling water. Let them soak for 5 minutes to soften.

Step 2

Drain the sun-dried tomatoes and reserve 2 tablespoons of the soaking liquid.

Step 3

In a food processor, combine the softened sun-dried tomatoes, olive oil, fresh basil leaves, almonds, garlic clove, lemon juice, and the reserved soaking liquid.

Step 4

Blend the mixture until smooth. Pause occasionally to scrape down the sides of the processor to ensure even blending.
