  • 6 pieces Sundried tomatoes (no oil)
  • 0.5 cups Hot water
  • 2 tablespoons Extra-virgin olive oil
  • 2 tablespoons Balsamic vinegar
  • 2 tablespoons Lemon juice (freshly squeezed)
  • 1 clove Garlic (minced)
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Dried basil
  • 0.25 teaspoons Ground black pepper
  • 2 tablespoons Water

Directions

Step 1

Place the sundried tomatoes in a small bowl and pour the hot water over them. Allow them to soak for 5-7 minutes until softened.

Step 2

Once softened, drain the sundried tomatoes, reserving a tablespoon of the soaking liquid for added flavor.

Step 3

In a blender or food processor, combine the soaked sundried tomatoes, reserved soaking liquid, olive oil, balsamic vinegar, lemon juice, minced garlic, Dijon mustard, dried basil, ground black pepper, and the additional 2 tablespoons of water.
