Prep Time:10 mins
Cook Time:5 mins
Total Time:15 mins
Servings: 4

Ingredients

  • 400 grams Morning glory (water spinach, trimmed and cut into 3-inch pieces)
  • 4 cloves Garlic, finely chopped
  • 2 small Red chili, sliced (adjust for spice preference)
  • 2 tablespoons Low-sodium soy sauce
  • 1 tablespoon Oyster sauce, reduced sodium (optional for vegetarian/vegan diets: use mushroom sauce)
  • 2 tablespoons Vegetable broth (unsalted)
  • 2 teaspoons Toasted sesame oil
  • 1 tablespoon Vegetable oil or avocado oil

Directions

Step 1

Wash the morning glory thoroughly and trim into 3-inch pieces, discarding any tough stems.

Step 2

Prepare the sauce in a small bowl by mixing together the low-sodium soy sauce, oyster sauce (or mushroom sauce), vegetable broth, and toasted sesame oil. Set aside.

Step 3

Heat a large wok or skillet over medium-high heat. Add the vegetable oil once the pan is hot.

Step 4

Toss in the chopped garlic and sliced red chili, stirring quickly to prevent burning, for about 30 seconds or until fragrant.

Step 5

Add the morning glory to the wok, tossing quickly to coat with garlic and chili. Stir-fry for 1 to 2 minutes until the leaves begin to wilt.

Step 6

Pour the prepared sauce over the morning glory, and toss to combine. Cook for another 1 to 2 minutes, stirring constantly, until the stems are tender-crisp but not overcooked.

Step 7

Remove from heat and transfer to a serving plate. Serve immediately as a side dish or pair with steamed rice for a complete meal.
