Ingredients

  • 300 grams Lean beef (such as sirloin or tenderloin), sliced into thin strips
  • 3 tablespoons Low-sodium soy sauce
  • 3 cloves Fresh garlic, minced
  • 1 teaspoon Fresh ginger, grated
  • 1.5 tablespoons Sesame oil (choose a heart-healthy brand)
  • 2 cups Broccoli florets
  • 1 medium Carrot, thinly sliced into matchsticks
  • 1 medium Red bell pepper, sliced into strips
  • 1 cup Snow peas
  • 2 cups Brown rice or quinoa (optional, for serving)
  • 2 teaspoons Cornstarch
  • 2 tablespoons Water
  • 2 tablespoons Fresh chopped cilantro (optional, for garnish)

Directions

Step 1

In a small bowl, mix the low-sodium soy sauce, minced garlic, grated ginger, cornstarch, and water to create the stir-fry sauce. Set aside.

Step 2

Heat 1 tablespoon of sesame oil in a large, non-stick skillet or wok over medium-high heat.

Step 3

Add the beef strips to the skillet and stir-fry for 2-3 minutes until browned but not fully cooked. Remove the beef from the skillet and set aside.

Step 4

Add the remaining 0.5 tablespoon of sesame oil to the skillet. Toss in the broccoli, carrot, red bell pepper, and snow peas. Stir-fry the vegetables for 5-7 minutes, or until slightly tender but still crisp.

Step 5

Return the beef to the skillet and pour the stir-fry sauce over the mixture.

Step 6

Cook for an additional 3-4 minutes, stirring frequently, until the beef is cooked through and the sauce has thickened slightly.

Step 7

Serve immediately over brown rice or quinoa if desired. Garnish with fresh cilantro for added flavor and aroma.
