Ingredients

  • 2 Large fresh artichokes
  • 3 tablespoons Olive oil
  • 2 tablespoons Fresh lemon juice
  • 1 clove Garlic, minced
  • 2 cups Water
  • 0.25 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 1 tablespoon Fresh parsley, chopped (optional)

Directions

Step 1

Prepare the artichokes by trimming the stems so the artichokes sit flat. Remove the tough outer leaves near the base and snip the pointed tips off the remaining leaves with kitchen scissors. Rinse thoroughly under running water.

Step 2

In a large pot, add 2 cups of water and place a steaming basket or rack over the water. Make sure the water does not touch the bottom of the basket.

Step 3

Place the trimmed artichokes in the steaming basket, base-side down, and cover with a lid. Bring the water to a boil, then reduce the heat to a gentle simmer. Steam for 25-30 minutes, or until the stem is tender and can be easily pierced with a knife.

Step 4

While the artichokes are steaming, prepare the lemon butter alternative. In a small dish, whisk together olive oil, fresh lemon juice, minced garlic, salt, and black pepper until well combined. Optionally, mix in fresh parsley for added flavor.
