Ingredients

  • 500 grams Lean beef steak (such as sirloin or eye of round), trimmed of excess fat
  • 1 tablespoon Olive oil
  • 1 medium Yellow onion, finely chopped
  • 3 cloves Garlic, minced
  • 2 medium Carrots, finely diced
  • 1 cup Low-sodium beef broth
  • 1 cup Unsweetened almond milk (or low-fat milk)
  • 2 tablespoons Cornstarch
  • 100 grams Low-fat shredded cheddar cheese
  • 1 teaspoon Fresh thyme leaves, chopped
  • 1 tablespoon Fresh parsley, chopped
  • 1 crust Whole-grain pie crust (store-bought or homemade)
  • 0.5 teaspoons Ground black pepper
  • 0.25 teaspoons Salt (optional, keep to a minimum for heart health)

Directions

Step 1

Preheat your oven to 180°C (350°F).

Step 2

Pat the lean beef steak dry with paper towels and dice it into small, bite-sized pieces.

Step 3

Heat olive oil in a large skillet over medium heat. Add the diced beef and cook until browned on all sides. Remove the beef from the skillet and set aside.

Step 4

In the same skillet, add the chopped onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for an additional minute.

Step 5

Stir in the diced carrots and cook for 5 minutes, or until they start to soften.

Step 6

Return the beef to the skillet, and pour in the low-sodium beef broth. Add the thyme and parsley, and season with ground black pepper (and salt, if using). Let the mixture simmer for 10 minutes.

Step 7

While the filling is simmering, whisk the cornstarch into the milk until smooth. Gradually add this mixture to the skillet, stirring constantly, until the filling thickens. Remove from heat and fold in the shredded low-fat cheese until melted.

Step 8

Place the whole-grain pie crust into a pie dish. Pour the beef and vegetable mixture evenly into the crust.

Step 9

Cover the pie with the second layer of crust (if using a double crust), and crimp the edges together. Cut a few small slits in the top crust to allow steam to escape.

Step 10

Bake in the preheated oven for 30-35 minutes, or until the crust is golden brown.

Step 11

Remove the pie from the oven and let it rest for 5-10 minutes before slicing and serving. Enjoy a heart-healthy, flavorful pie!
