Ingredients

  • 1 sheet Whole-grain croissant dough
  • 2 cups Baby spinach
  • 0.5 cup Low-fat feta cheese
  • 1 teaspoon Olive oil
  • 2 cloves Garlic (minced)
  • 0.25 teaspoon Black pepper
  • 1 egg Egg wash (1 egg whisked with 1 tablespoon water)

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

Step 2

Heat olive oil in a skillet over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

Step 3

Add baby spinach to the skillet and cook until wilted, about 2-3 minutes. Sprinkle with black pepper and stir. Remove from heat and let cool slightly.

Step 4

Unroll the whole-grain croissant dough and divide it into triangles as indicated by the pre-cut lines.

Step 5

Place a small amount of the spinach mixture and approximately 1 tablespoon of crumbled low-fat feta cheese at the widest end of each triangle.

Step 6

Starting from the wide end, gently roll each triangle toward the pointed end, tucking the filling inside as you go. Place the rolled croissants on the prepared baking sheet, ensuring the seams are on the bottom.

Step 7

Brush the tops of the croissants lightly with the egg wash to promote browning.

Step 8

Bake in the preheated oven for 12-15 minutes, or until the croissants are golden brown and cooked through.

Step 9

Remove from the oven and let cool for a few minutes before serving.

Step 10

Enjoy warm as a heart-healthy breakfast or snack!
