Ingredients

  • 12 oz Whole-grain pasta (penne or fusilli preferred)
  • 6 cups Baby spinach (fresh)
  • 2 tbsp Extra-virgin olive oil
  • 3 cloves Garlic (minced)
  • 1.5 cups Cherry tomatoes (halved)
  • 1 cup Low-fat ricotta cheese
  • 0.25 cup Grated Parmesan cheese
  • 0.25 cup Fresh basil leaves (chopped)
  • 2 tbsp Lemon juice (freshly squeezed)
  • 1 tsp Salt
  • 0.5 tsp Ground black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the whole-grain pasta according to package instructions until al dente. Reserve 1/2 cup of pasta cooking water, then drain the pasta and set aside.

Step 2

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.

Add the halved cherry tomatoes to the skillet. Cook for 3-4 minutes until they start to soften and release their juices.
