Ingredients

  • 8 large Egg whites
  • 2 large Whole eggs
  • 4 cups Fresh baby spinach
  • 1 cup Cherry tomatoes (halved)
  • 1 cup Reduced-fat feta cheese (crumbled)
  • 1 small Yellow onion (diced)
  • 1 tablespoon Extra virgin olive oil
  • 2 tablespoons Low-fat milk
  • 2 cloves Fresh garlic (minced)
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Salt
  • 2 tablespoons Fresh parsley (chopped, optional for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a medium-sized bowl, whisk together the egg whites, whole eggs, and low-fat milk until well combined.

Step 3

Season the egg mixture with black pepper and salt, and set aside.

Step 4

Heat the olive oil in an oven-safe, non-stick 10-inch skillet over medium heat.

Step 5

Add the diced onion and sauté for 2-3 minutes, or until the onion becomes translucent.

Step 6

Stir in the minced garlic and cook for an additional 1 minute.

Step 7

Add the fresh baby spinach to the skillet, stirring until wilted, about 2-3 minutes.

Step 8

Toss in the halved cherry tomatoes and evenly distribute them across the skillet.

Step 9

Pour the egg mixture over the vegetables in the skillet, gently tilting the pan to spread it evenly.

Step 10

Sprinkle the reduced-fat feta cheese evenly across the top of the egg mixture.

Step 11

Cook on the stovetop over medium-low heat for 5-7 minutes, or until the edges of the frittata begin to set.

Step 12

Transfer the skillet to the preheated oven and bake for 12-15 minutes, or until the center of the frittata is fully set and cooked through.

Step 13

Carefully remove the skillet from the oven and allow the frittata to cool for a few minutes.

Step 14

Slice into wedges, garnish with fresh parsley (optional), and serve warm.
