Ingredients

  • 14 oz firm tofu
  • 1 tbsp olive oil
  • 1 medium yellow onion

  • 1 tbsp ginger
  • 1 small red bell pepper
  • 1 medium zucchini
  • 4 cups low-sodium vegetable broth
  • 1 15-oz can diced tomatoes
  • 1 tbsp low-sodium soy sauce
  • 1 tbsp chili paste or sambal oelek
  • 1 tsp ground cumin
  • 1 tsp paprika (smoked or sweet)
  • 0.5 tsp turmeric powder
  • 2 cups baby spinach
  • 2 tbsp fresh cilantro (optional, for garnish)
  • 4 pcs lime wedges (optional, for serving)

Directions

Step 1

Press the tofu to remove excess water. Cut it into 1-inch cubes and set aside.

Step 2

In a large pot, heat olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until softened.

Mince the garlic and ginger, then add them to the pot. Stir and cook for 1 minute until fragrant.
