Ingredients

  • 4 ears Fresh sweet corn
  • 2 tablespoons Extra-virgin olive oil
  • 1 small Yellow onion
  • 2 cloves Garlic
  • 0.25 cup Unsweetened almond milk
  • 0.5 teaspoon Ground black pepper
  • 0.5 teaspoon Smoked paprika
  • 0.25 teaspoon Sea salt
  • 2 tablespoons Fresh parsley

Directions

Step 1

Shuck the corn and carefully remove all silk. Stand each ear of corn upright on a cutting board and use a sharp knife to cut the kernels off the cob. Set the kernels aside.

Step 2

Finely dice the yellow onion and mince the garlic cloves.

Step 3

Heat a large non-stick skillet over medium heat and add the extra-virgin olive oil.

Step 4

Once the oil is heated, add the diced onion to the skillet and sauté for 3-4 minutes, or until the onion becomes soft and translucent.

Step 5

Add the minced garlic to the skillet and cook for an additional 1 minute, stirring frequently to avoid burning.

Step 6

Stir in the fresh corn kernels and cook for 5-7 minutes, stirring occasionally, until the corn kernels become tender and slightly caramelized.

Step 7

Reduce the heat to low and add the unsweetened almond milk, ground black pepper, smoked paprika, and sea salt. Stir well to combine and cook for another 2-3 minutes to allow the flavors to meld.

Step 8

Remove the skillet from heat and sprinkle the dish with freshly chopped parsley before serving.

Step 9

Serve warm as a side dish and enjoy your heart-healthy Southern Fried Corn!
