Ingredients

  • 2 large aubergines (eggplants)
  • 3 garlic cloves
  • 1 lemon, juiced
  • 3 tablespoons tahini
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 0.5 teaspoon salt
  • 0.25 teaspoon freshly ground black pepper
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Preheat the oven to 400°F (200°C).

Step 2

Wash and pat dry the aubergines. Using a fork, prick the aubergines all over to allow steam to escape during cooking.

Step 3

Place the aubergines on a baking sheet lined with parchment paper. Roast in the preheated oven for 35-40 minutes, or until the aubergines are very tender and the skin is charred.

While the aubergines are roasting, peel the garlic cloves and smash them slightly to release their oils.

Once the aubergines are cooked, remove them from the oven and let them cool for a few minutes until you can handle them.
